chicken breasts or thighs
1 peach, peeled/sliced
1 jar peach preserves
1/4 cup worcestershire sauce
1/2 to 1 cup bbq sauce (i estimated)
1/2 onion, diced, or 1 tsp onion powder
1 tsp minced garlic
olive oil
heat olive oil in pan, add garlic and onions, simmer
add chicken, brown on both sides
add peach slices, preserves, worcestershire sauce, bbq sauce — mix
reduce heat to medium low/simmer
simmer for an hour/hour and a half, stirring occasionally
this was pretty tasty with creamy mashed taters–sweet & salty worked out nicely. :)
i took the pioneer woman’s recipe and tweaked it. we were out of whiskey (gasp) and i added whole peach slices. also subbed onion powder for onions, since i don’t like them.
