Stuffed Peppers

these always remind me of my grandma’s house :) excellent comfort food.

cut the stems out of 4 green peppers and hollow out the guts.

cook up some ground beef in a pan and drain
mix in 1-2 cups of cooked white rice (depending how much rice you want)
throw in a can of yellow corn
add salt and pepper to taste

pour mixture into each pepper and fill to the top

in a large pot, mix 2 cans of tomato soup and 1 cup of water

place peppers into pot face down

cover and cook on medium heat until peppers are kind of squishy (i just poke them with a fork)
